Effeuno Biscotto Breaking-In Procedure

HOW CAN I PROCEED WITH THE SEASONING OF THE BISCOTTO?

Properly seasoning the Effeuno Biscotto stone is essential to ensure its maximum performance and durability over time. It is recommended to carefully follow the instructions below:

1. Placement of the Stone: Insert the Effeuno Biscotto stone inside the oven’s cooking chamber.

2. Oven Ignition: Turn on the oven using the dedicated ignition button.

3. First Heating Step:
– Turn the knobs (lower and upper) to reach a temperature of 100°C.
– Wait for the oven to maintain this temperature for about 20 minutes.

4. Second Heating Step:
– Increase the temperature by turning the knobs (lower and upper) to 150°C.
– Keep the oven at this temperature for another 20 minutes.

5. Subsequent Increments:
– Repeat the operation described in point 4, increasing the temperature by 50°C each time, until reaching the oven’s maximum temperature.

IMPORTANT NOTE

It is strongly recommended to proceed gradually in increasing the temperature. The slower the temperature is raised, with more intermediate heating steps, the better the yield of the Biscotto. This allows the stone to slowly adapt to thermal variations, preserving its integrity and optimizing its performance.

Additionally, it is important to ensure proper ventilation of the surrounding environment during the seasoning procedure, as there may be an odor caused by the stone’s cooking (odors that are entirely normal and only occur during seasoning).

HOW CAN THE BISCOTTO BE CLEANED?

To clean the Biscotto stone, we recommend (at the end of cooking) heating the oven to the maximum temperature (without any dishes inside, only with the Biscotto), in order to carbonize any possible residues. After that, when the oven is completely cold, a damp cloth/scraper can be used to be able to remove the charred residue.
